Three rules for cooking mushrooms
- Identify first, always. A recipe never makes a misidentified mushroom safe. When in doubt, throw it out.
- Cook thoroughly. Most wild edibles should be cooked, not raw. Several are toxic until heated through.
- Try one species at a time. With a new mushroom, eat a small amount first to rule out an individual sensitivity.
