Grilling suits this species particularly well, for a reason that has nothing to do with nutrients. A flat fan sits properly on a ridged surface, where a domed cap wobbles and only touches in one place.
The frying result is the one worth taking seriously, given how often these are deep fried into a snack. That method came out worst on every compositional measure they took, which does not make it wrong and does make it a choice rather than a default.
